A Nut & Grain Free Banana Muffins Recipe, Perfect for Breakfast
Last week I posted a recipe for a banana, carrot & apple loaf which I had made. It was pretty good but it was way too big to be making every week and it raised a problem for some of my readers in that it contained nuts and they couldn’t eat it.
So faced with a little problem to solve I decided this week I would free-style a coconut flour based banana muffins recipe and I am really impressed with how it turned out. For this I used a stick blender and just blitzed everything together and baked for 20 minutes on the lower shelf in the oven. Double check that a toothpick or a kebab stick comes out clean and there you have it – super easy banana muffins recipe with no grains and no nuts.
I think this could end up being a regular on my menu as it is just so easy to make and so convenient to grab on the go. I bet they would also be amazing with a dollop of clotted cream or homemade custard as dessert option.
Makes 4 Muffins
– 1 Banana
– 2 Eggs
– 1 tsp Baking Powder
– 1 Tbsp Honey
– 1 Tbsp Milled Linseed with seeds and berries from Aldi (photo of packaging in my breakfast bar post
– 1/4 Cup Coconut Flour
– 2 Tbsp Coconut Oil (Melted)
1. Blitz it all together until smooth & divide between 4 muffin cases
