The first meal after falling off the carb wagon…again
I have fallen off the carb wagon many times before and I don’t really know why I do it as it leaves me feeling really terrible in my stomach and will take me a couple of days to recover. This time the reason that I have fallen off the wagon as I am a total sucker for trying any new food places, especially pop ups.
This last week we have been spent the week at the Edinburgh festival and we have eaten out most days trying everything from Falafel wraps from the Falafel Hut at the Pleasance (yum), Pad Thai from PadBkk (dissapointing), Pad Thai from the Pad Thai Shak (average & hot held instead of fresh), lots of poutine from Tony Singhs popup (awesome) and an amazing steak burger from St Andrews Square to name a few.
After the week of over indulging on carbs and too much beer, I woke up this morning feeling grotty, bloated, unhealthy and really ready to get back on the healthy eating; but I also had a major craving for something like Chinese so had to come up with a homemade compromise to get me through the first day.
After spending some time skimming through some cookbooks I decided to go for a light stirfry with loads of ginger and sesame as the main flavours and bulked it out with loads of fresh vegetables to make me feel healthier.
I have mentioned before about the key to stirfry is to be fully prepared before you start cooking so take the time and slice all of your vegetables and chicken prior to turning on the heat. I have used a wok for this butt you could also cook this in a big frying pan.
I served the ginger and sesame chicken with egg fried cauliflower rice but you could serve with rice if you were not too fussy on dropping your carbs right down low. We tried one of the pre-cooked bags of rice this week and they are fab for a quick option for dinner, I was really surprised
