Quick and Easy Butternut Noodles, Perfect for a Vegetable Boost

go As you probably know I am quite a fan of Asian style food so I wanted to make a really quick satay style noodle dish for lunch last Sunday and this is what I came up with. You could add some coconut milk or cream to the sauce to make it a creamier eat but I didn’t want to open a can just for this and fancied a lighter eat.
click The peanut butter in the sauce adds a nice richness and the soy adds the a good hit of saltiness and a squeeze of lime for sourness. I added a tsp of honey to the sauce but you could actually miss this out because the butternut tastes quite sweet naturally.
