Quick and Easy Butternut Noodles, Perfect for a Vegetable Boost
As part of my ‘getting back on the healthy eating’ track I am making a conscious effort to boost my vegetable intake and spiralizing vegetables is such a great, easy way to do this. If you don’t own a spiralizer yet I would highly recommend picking up one of these gadgets, they are fab.
As you probably know I am quite a fan of Asian style food so I wanted to make a really quick satay style noodle dish for lunch last Sunday and this is what I came up with. You could add some coconut milk or cream to the sauce to make it a creamier eat but I didn’t want to open a can just for this and fancied a lighter eat.
The peanut butter in the sauce adds a nice richness and the soy adds the a good hit of saltiness and a squeeze of lime for sourness. I added a tsp of honey to the sauce but you could actually miss this out because the butternut tastes quite sweet naturally.
You could also play around with the vegetables that you spiralize, I think courgette or sweet potato would also work really well. Let me know if you try a variation of this dish.
