Turkey Gyozas Served on Home Sprouted Beans Stir Fry
A few days ago I posted a step by step guide to sprouting your own beans at home (here), did any of you set them up?
Well, if you did but you are now not so sure what to do with them, here is a quick and easy, tasty stir fry that you could try. I have topped the stir fry with homemade turkey gyozas made out of the left over turkey meatballs mixture from this recipe. You can search on youtube for video of how to shape your gyozas.
You could of course top with any flavour of gyoza and there are now some pretty good pre-made options out there, especially from Asian supermarkets in the freezer section. If you don’t have a Asian supermarket near you, M&S do some prawn gyozas which are quite tasty and pretty close to homemade.
The stir fry sauce for this recipe is cooked before adding to the wok, this is to reduce the liquids slightly and gives a really intense, slightly sticky sauce to coat the sprouted beans and all of the vegetables. It is a little bit more of effort than just sloshing it all in the pan but I think it is worth it.
Back before I started cutting sugar out of my diet I used to make a beef & broccoli dish with a reduced sauce like the one in this recipe, big difference however was it had 6 tbsp of sugar in it, shocking to think about it now (even though it was very tasty). It does make you think about how much sugar a standard Chinese takeaway could have in it to get the level of sweetness that a large majority of their meals do. Quite scary really.

- 1 Leftover Turkey Meatball Mix Recipe in link above to Turkey Meatballs
- 10 Individual Pre-made Gyoza Wrappers
- 1/2 Cob Sweetcorn Cut the kernals off
- 1 Handful mangetout Cut in half diagonally
- 1 Handful babycorn
- 1 Handful Greenbeans Cut into approx 1cm pieces
- 1/2 Whole carrot Cut into slithers
- 1/4 Whole Red, Green & Yellow Pepper Cut into strips
- 1/4 Head Broccoli Cut into little strips
- 1 Handful Asparagus Cut into approx 1 cm pieces

- 2 Handful Beansprouts
- 1/2 Whole Deseeded Chilli Cut into slithers
- 1 Thumb ginger Grated
- 5 Tbsp Soy Sauce
- 2 Tbsp rice vinegar
- 1 Tbsp Spiced Black Rice Vinegar Merchant Gourmet Brand
- 1 Tbsp honey
- 1 Tbsp fish sauce
- 1 Tsp sesame oil
- 1 Tbsp Sriacha
- Start by preparing your gyozas. Take each wrapper at a time and add around 15g of turkey mix, dab around the edges with water and stick together.
- Leave to the side until you are ready to start cooking your stir fry. To cook:- heat a flat bottomed pan that you have a lid for over a medium-high heat with a tbsp oil in. Place the gyozas in and pour in around 1/2 cup of water (it should cover the base of the pan by about 1/2 cm). Put the lid on, turn heat to medium and cook for 8-10 minutes. They will be ready when all the water has disappeared and they have a crispy bottom.
- Start by gently frying your ginger and chilli in a little oil until there is a light golden colour on the ginger
- Add all of the other ingredients and let it reduce for 5-10 minutes, it should be a little sticky and will coat a spatula
- Start with prepping all of your veg
- In a wok, or large frying pan if you don't have a wok, heat 2-3 tbsp of oil over a high heat. Add all of the ingredients to the pan and stir fry for around 5 minutes stirring regularly to avoid it catching.
- Add the sticky stir fry sauce and stir fry for 1-2 minutes
- Serve the stir fry with the gyozas on top and enjoy
