Infused Chicken Broth with Charred Ginger
  1. Start by charring your ginger under the grill, you are looking for a dark roast colour but not burnt. Then add all ingredients into a pan and heat until just simmering and leave to infuse with a lid on whilst you do everything else. Will take around 45 minutes.
Meatballs
  1. Start with adding all the ingredients into a bowl
  2. Mix well using your hands to full incorporate all of the ingredients together to ensure even flavouring
  3. Next form your meatballs, you are looking for quite little dinky ones that you could eat in whole
  4. Gently fry the meatballs to get a nice golden colour all over and are fully cooked inside
For the Bowl
  1. Prep the carrot and mangetout and cook the noodles as per instructions on pack
  2. Now its time to layer up your bowl. Start with the next of noodles and then add in sections the beansprouts, coriander, veg and meatballs. Using a ladle spoon over the hot broth (leaving the infusing ingredients in the pan). And enjoy, add additional soy if you want it saltier and a fresh squeeze of lime for a little acidity.
