Harissa Coated Whole Cauliflower Baked with Lemon & a Drizzle of Oil
I have been seeing whole cauliflower bakes all over the place for the last few months from pinterest to the monthly foodie mags, so thought I was time to give it a try and see how it turned out.
I went for a really straight forward harissa whole cauliflower using tesco harissa paste and a drizzle of lemon to help cut through the spice a little bit. There are so many different ideas that you could try for this and mix it up on a weekly basis – this could be the vegetarian equivalent of my midweek meal series. I didn’t want to put masses of effort making a marinade as I was not sure how it would actually turn out. I would revisit this now with different homemade marinades.
Some of the recipes out there already for additional inspiration – Jamie Olivers Thyme & Paprika, Ottolenghis with Creme Fraich, and Joy the Bakers with Cheddar Beer Sauce. I have to say out of all of those I am loving Joys idea with the pre-blanched infused cauliflower before baking to increase the flavour (and Cheese & Beer sauce – yum!).
I went for the easiest route and just popped it in the oven – in hindsight I would maybe be tempted to give it an infusion before roasting – one to give flavour into the core and two too ensure it was cooked all the way through. I had a huge cauliflower and the right core was a little al-dente but still edible. I would suggest either pre-boiling for 10 minutes of cooking at 200C instead of 180C like I did.
Overall I really liked it and I like the concept and the possibilities to try. Perfect for a vegetarian centre piece or just for one of your meat free days.
– 1 whole cauliflower (remove the leaves and cut flat at the bottom)
– 3/4 tsp Harissa Paste (I used Tesco)
– 1/2 Lemon (Juice only)
– Drizzle of Oil
1. Drizzle over the lemon juice and rub the harissa paste all over the cauliflower. Drizzle with a little oil and rub. The creases will have a concentrated amount of paste – this is ok.
2. Bake in the oven until a highlights of colour present. Mine took about 1 hour at 180C but I would cook at a hotter temperature for less time next time.
So there you have it, a very ‘on trend’ whole cauliflower baked with a harissa paste.
